My partner and I were staying in Aurland for a few days so naturally we had a look online for local restaurants and our search led us to Kest. Although it had no reviews on Google, a few impressive professional photos persuaded us to book the Tasting Menu for the following evening. Having just opened last week, we were some of the first guests to experience this menu which was such a huge privilege and an experience we’ll cherish for a long time.

The 8-course menu is entirely crafted using locally foraged ingredients (from within a 30 minute radius), with minimal waste. The booking window closes 20 hours before each service time so they can plan the forage accordingly.

Each course was exquisite and offered something completely different to the last. We were blown away by the care and attention that had gone into each recipe design, with such a huge focus on ‘where’ (or “Kest” in the local dialect) specifically the ingredients came from.

Tomas, Mantas and Lund (sorry for any incorrect spellings!) explained the concept behind each course in great detail, pointing out how they locally sourced the ingredients and how it was prepared. The wine pairings prepared by Tomas were also perfect, with each wine complementing the flavours of the food.

If you are planning on visiting Norway, I would highly recommend factoring in a dinner at Kest. You will experience some of the incredible local flavours Norway has to offer, accompanied by unbelievably attentive service.

Some of our favourite dishes photographed include scallops with rutabaga, as well as the langoustine lightly grilled with dandelion, parsley and horseradish (the dish is designed to represent the fjords and mountains!)
